Alternative Stir Fry

Who doesn’t love a good stir fry? With that little hint of salt and seasonings combined with fresh vegetables and your favorite meat or seafood, it easily becomes comfort food worth becoming addicted over.

This dish is a healthier and very little MSG version of a traditional stir fry. Using the flavors of natural ginger, garlic, paprika and balsamic vinaigrette, you can still a flavorful, colorful and low calorie meal that everyone will love!


What you’ll need:


  • 1 bag of raw shrimp

  • 1 tb of paprika

  • 1 tb garlic powder

  • 1 ½ tb butter

  • A splash of red wine

  • One sliced green bell pepper

  • One slice white onion

  • Shaved carrots ( 1 then finely chopped )

  • A cup of ham

  • 1 cup of red cabbage *chopped*

  • ¼ cup of fresh pineapple

  • 3 tbs of balsamic vinaigrette

  • 3 cups of brown rice

  • 1 ½ tb of ginger

  • 3 eggs, scrambled


Thaw out the shrimp and marinate in garlic powder and paprika for 24 hours.


Cook the three cups of rice in 6 cups of water in a large bowl in the microwave for 15 to 20 minutes. Once rice is cooked, place inside a medium sized skillet on medium heat with balsamic vinegar and scrambled eggs.


Cut the ham, vegetables and pineapple and cook on high heat in balsamic vinaigrette for 5 to 10 minutes with the lid on in a medium skillet. Drain whatever juice begins to accumulate in the skillet. 


Cook the shrimp in the butter and red wine for 7 to 9 minutes on high heat in a ceramic skillet.

Plate and enjoy!

The Perfect Lamb Steak

Being a fan of juicy, tender, perfectly cooked meat, there’s one type of meat that can either go great or horribly wrong just through your method, I’m talking about Lamb, a meat with an intense flavor all on its own and really has to be done a certain way to make sure it turns out just the way you want it to. Today I will be telling you how to cook a perfect piece of Lamb in the comfort of your own home.

What you’ll need:

  • 2 Lamb Leg Steaks
  • 1 tablespoon garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of ground black pepper
  • 1 tablespoon of sea salt
  • 1 tablespoon of chopped rosemary
  • 1/3 cup of Worcestershire sauce
  • 2 fresh rosemary stems
  • 4 tablespoons of softened butter
  • 2 tablespoons of minced finely chopped garlic

Instructions:

Wash off the two lamb steaks with cold water and place on a clean plate, then brush with the Worcestershire sauce on both sides and season with the garlic powder, onion powder, black pepper, chopped rosemary and sea salt on both sides and broil in the oven for about 10 minutes or until the steaks are a medium brown color.

Take out of the oven and let rest for 5 minutes then place in a medium skillet with the softened butter and minced garlic, occasionally spooning the garlic butter mixture on top for about 3 to 5 minutes. Take off the skillet and let rest for 5 minutes, decorating them with the fresh rosemary stems.

Amazing Tomato & Herb Pasta Sauce

Who doesn’t love a warm, fresh, herby, authentic tasting tomato sauce? It completes whatever you pour it on, whether that be pasta, meat or use it as a dip for your mozzarella sticks, bread sticks or garlic bread! So today I will show you how to make an inexpensive, great tasting sauce that takes literally five minutes!

What you’ll need:

  • Five tomatoes
  • 1/3 cup of fresh sweet basil
  • 1/3 cup of fresh basil
  • 1 tablespoon of white truffle oil
  • 2 teaspoons of red pepper flakes
  • 2 teaspoons of ground black pepper
  • 2 teaspoons of sea salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 can of tomato paste
  • 1 tablespoon of red wine vinegar
  • 1 tablespoon of red cooking wine
  • 1/4 cup of sugar
  • 2 tablespoons of minced finely chopped garlic
  • 1 stem of fresh rosemary

Instructions:

In a food processor, place the tomatoes, sweet basil, basil, truffle oil, red pepper flakes, black pepper, sea salt, garlic powder, and onion powder inside and blend on high for 30 to 45 seconds until everything is finely chopped and the density of a soup.

Pour the tomato and herb mixture into a medium sized sauce pan and turn the heat to medium, combining the tomato paste, vinegar, red cooking wine, sugar and minced garlic together, stirring until the sauce becomes a dark red and is mixed together well then let simmer with a stem of fresh rosemary for about 3 to 5 minutes or until the sauce begins to bubble. Turn the heat off and pour over what you desire.

Crispy chicken, Shrimp & Broccoli Alfredo Pasta Bake

20170628_104020Nothing screams comfort food quite like a tasty Alfredo sauce on top of a delicious entree and while some believe Alfredo sauce in a can can be savory and delicious, it often lacks in that fresh ingredient, homemade quality so here today, I will walk you through step by step on how to make a perfect homemade Alfredo sauce and a comforting casserole to pair it with.

What you’ll need:

  • 1 cup of Parmesan cheese
  • 1 cup of Romano cheese
  • 1/2 cup of mozzarella cheese
  • 2 1/2 cup of heavy whipping cream
  • 2 teaspoons of black pepper
  • 1 teaspoon of sea salt
  • 1 tablespoon of fresh chopped basil
  • 1 tablespoon of fresh chopped cilantro
  • 1/4 tablespoon of a crush garlic clove
  • 3 individual chicken breasts
  • 2 eggs
  • 1/3 cup of avocado oil
  • 1 tablespoon black pepper
  • 1 tablespoon of garlic powder
  • 2 cups of panko bread crumbs
  • 1.5 LB of rotini pasta or elbow pasta
  • 1 head of broccoli cut into smaller pieces
  • 1 bag of frozen small shrimps ( 44 – 60 CT )
  • 1/3 cup of soften butter
  • 1/2 tablespoon garlic powder
  • 1 teaspoon of black pepper

Oven fried chicken recipe instructions:

Preheat the oven to 450 degrees.

Mix the eggs and oil together in a medium size bowl and pour the panko breadcrumbs into another bowl. Bring out a large pan and cover it with parchment paper and set aside, dip each chicken breast into the egg oil mixture then coat with panko breadcrumbs and place onto the pan then place in the oven and cook for 20 to 25 minutes. At the same time, cook the pasta on high for 7 to 10 minutes.

Alfredo sauce instructions:

Heat a medium size sauce pan, pour in the heavy cream, heat until it starts to bubble then place the three cheeses, black pepper, sea salt, basil, cilantro, and garlic and whisk together slowly for about three minutes then turn off the heat and place a lid on it to keep it warm.

Cut the broccoli head into smaller pieces and steam cook them then mix it in with the pasta once it is completely cooked.

 

Shrimp instructions:

Take out a large skillet and heat on a high fire, place 1/3 cup of butter, shrimps, black pepper and garlic powder and cook for about 5 to 8 minutes then once they are completely pink, take out and mix in with the pasta as well.

Once the chicken is done, take out and let it cool for 5 minutes then place on a cutting board and cut into slices and set aside. Keep the oven on.

Bring out a casserole pan and spray with nonstick spray then take half the chicken slices and arrange them at the bottom of the pan then place the pasta, broccoli and shrimp mix into the pan, then arrange the rest of the chicken slices on top and pour the sauce onto the top of the pan and place in the oven for 5 to 10 minutes or until the top browns a little. Take out, let it cool off then enjoy! Pair this meal with a glass of white wine and bread sticks for an italian feeling to your dining room!
